How To Make Eggnog


Hello, I hope you are all having a wonderful day. 

The holidays are coming up and it is the perfect time of year for some eggnog to curl up with a good book or a favorite hook and some yarn or watch some netflix (I can't wait to watch the new season of Gilmore Girls) or while sitting and looking at the Christmas lights on the tree while listening to some christmas music on pandora. The list goes on and on, eggnog is so good at this time of year. So, how about some homemade eggnog? Keep scrolling for the video tutorial and the written instructions.



I think this is a wonderful and easy recipe and the best part is that the eggs are not raw! Eggnog is very popular in my house, and I am very happy with how much my family loves this recipe.

Eggnog

Servings

About 3 
(you can double or triple this recipe)

Ingredients

2 egg yolks
1/3 a cup of granulated sugar
1 and 1/4 cups of milk
3/4 cup of heavy cream
1/2 teaspoon of ground nutmeg
1/2 teaspoon of vanilla extract
1/8 tea of cinnamon
Bourbon or rum is optional

Instructions

1. Add the cream, milk, cinnamon and nutmeg to a pot and bring to a gentle simmer. Stir occasionally.

2. While keeping an eye on the milk/cream mixture and stirring it occasionally, add in the sugar and egg yolks,to a large bowl, and beat with a hand mixer until this mixture doubles in size and is a pale yellow.

3. After the egg yolk mixture has turned to a pale yellow and the milk/cream mixture is simmering, use a ladle to add the simmering milk/cream mixture to the egg yolk mixture one scoop at a time, stirring with a whisk as constantly as you can.

4. Once most of the milk/cream mixture has been added to the egg yolk mixture, pour this new mixture into the rest of the pot of milk/cream mixture. Whisk constantly until this mixture has reached 160 degrees. You can check this with a candy thermometer.

5. After the eggnog has reached 160 degrees, pour it through a sieve to strain out any clumps of nutmeg or cinnamon.

6. Add in the vanilla and whisk again. This is also the point that you can add bourbon or rum if you like. Adding alcohol actually makes the eggnog last longer so it's better to put it in now, rather than later.

7. Put a lid or plastic wrap on the bowl of eggnog and put it into the refrigerator for at least 4 hours or overnight.

8. After the eggnog has been chilled, you can serve with some whipped cream or sprinkle more cinnamon and nutmeg on top, or both!

I even added some homemade whipped cream to mine.
